Spiced Sweet Potato Fries

  • 800g sweet potatoes
  • 2tbsp olive oil
  • 1tsp paprika powder
  • 1tsp ground cumin
  • pinch cayenne pepper, to taste
  • 1tsp sea salt
  • 4stbsp mayonnaise
  • 2-3tsp sriracha sauce


  • Heat the oven to 200°C / Fan 180°C / Gas 6 / 400°F.
  • Cut the sweet potatoes into sticks ¼ to ½ inch wide and 3 inches long. Toss them with the oil and spices, mixing well to ensure the sweet potato is coated.
  • Spread the sweet potato out on a baking tray lined with baking paper and place in the oven. Bake until brown and crispy, about 15 minutes, then flip and cook for a further10minutes. 
  • Make a spicy mayonnaise dipping sauce by mixing together the mayonnaise and sriracha sauce and serve alongside the fried.
